Initially lacking confidence and viewing her dyslexia as a real barrier to achievement, Rachel has grasped every opportunity to learn from her tutors, peers and industry mentors and colleagues, pushing herself through her apprenticeship.
Showing passion and determination, Rachel worked her way up and won a coveted position under the Head Chef at 5 out of 5, AA Rosette and multi–Michelin Star award winning chef Jean-Christophe Novelli’s new restaurant when it opened in Belfast.
Rachel has contributed significantly in her new work environment and has been promoted to Senior Chef de Partie with significant responsibilities. She has gained tremendous self-belief through the apprenticeship programme and has grown as a Chef, yet remains grounded and appreciative of the support and encouragement she has received. “I have my dream job plus supportive college training. I would definitely recommend an apprenticeship,” says Rachel.
