Soğuk mutfak departmanı mutfağın diğer bölümlerine kıyasla titiz ve sanatsal yönü ağır basan bir çalışmayı gerektirmektedir ve işletmenin yüzüdür.
Bu nedenlerden dolayı ulusal ve uluslararası soğuk mutfak kültürü, soğuk mutfak terimleri, soğuk mutfak teknikleri ve soğuk mutfağa ait temel reçetelerin öğretilmesi ve tanıtılması yapılacaktır.
